Veal from fattening with whole milk is also in demand for special veal products (small children's food, sanatoriums, branded meat programs, etc.). This demand is met primarily by full-fat fattening calves from organically farmed farms.
In contrast to fattening with milk replacer feed, with pure whole milk fattening the nutrient supply cannot be controlled via the drinking concentration or composition of the milk replacer feed. In comparison to fattening with milk substitute feed, this results in restrictions, especially with regard to the length of fattening, since due to the limited feed intake and the nutrient content of whole milk, the nutrient supply and thus the growth performance is limited.
In the present work, the influence of the live mass at slaughter (110 or 140 kg) and the breed (Fleckvieh, Brown Swiss, Holstein Friesian) on the fattening and slaughter performance, meat quality and economic efficiency of light whole-milk fattening calves, compared to fattening, should be examined with milk substitute feed.
