    Cattle fattening and product quality

Extensive young cattle are kept in the meadows and pastures under the best living conditions. This natural production process gives the growing animals a lot of freedom, which is why standard slaughter in particular means a lot of stress. The changes in the legal framework have recently made semi-mobile slaughtering possible on home farms.

The proposed project accompanies these slaughters and examines the effects of the stress hormones adrenaline and cortisol and, as a result, the quality of the meat.

Mechanically triggered carcass losses are reduced. These connections will be examined by the applicant as part of a scientific study. This provides for a standardized and controlled parallel trial of semi-mobile slaughter with a stationary slaughter of 15 young cattle each. The resulting differences are tested statistically and interpreted within the context of the small sample size.

A practical assessment of the process and a cost-effectiveness calculation round off the results.
