Performance and meat quality of Angus young cattle

Meat quality is becoming increasingly important to the local population. For young cattle producers, it is therefore crucial to take steps to improve meat quality. The current project aims to determine the meat quality, as well as the fattening and slaughter performance, that Angus young cattle can achieve under Austrian production conditions.

This project aims to gather experience with the use of the Angus breed for heifer production from suckler cow herds. Angus cattle are known for their robustness and adaptability and are therefore well-suited to extensive production systems. This trial will investigate the performance of heifers and steers of this breed and the quality of their meat.

In addition to purebred Angus cattle, Simmental x Angus crossbreeds are also examined. Simmental is the most important breed in Austrian suckler cow husbandry; however, crossbreeding with beef breeds is frequently carried out to improve slaughter performance and meat quality. Regular weighing of the young cattle makes it possible to determine daily weight gains, which are very important for the economic evaluation of the production system. During slaughter and butchering, important data on slaughter performance and meat quality are collected (pH drop, net daily weight gain, dressing percentage, meat grade, fat grade, proportion of valuable cuts). Subsequently, important meat quality parameters are also determined (meat color, shear strength, water retention capacity, composition, fatty acid profile).

Project goal

The data analysis aims to identify potential differences between purebred Angus and Simmental x Angus cattle, as well as between heifers and steers of these two genetic lines. Based on the results of this trial, information will be derived regarding the suitability of the Angus breed for suckler cow husbandry. This information will then serve as practical guidance.
