This trend has various causes, such as increased meat consumption, which has pushed potato use into the background; labor-related reasons for preparing potatoes in the kitchen; the availability of ready-made or semi-prepared potato products; and a lack of suitable storage facilities for inexpensive potatoes in the autumn.
This research project aimed to investigate the issue of storage under less-than-ideal conditions, as experienced by the average consumer. The central question was to what extent certain varieties are better suited for storage, and to what degree changes in the potato tuber during storage affect the taste and nutritional content of the potatoes.
For this purpose, selected varieties were chosen from potato variety trials and observed and sampled throughout the winter storage period. The samples were used to examine the sprouting behavior of the potatoes, determine the starch content, and conduct an organoleptic evaluation. Samples were also taken for chemical analysis.
It should be noted that the sprouting behavior of potatoes is also influenced by production factors such as location, fertilization, weather, and the degree of ripeness at harvest.
Potatoes must be stored correctly.
